What do we do with cans of random stuff sitting in the pantry. Tonight’s late night meal is “Pineapple & Baby Corn Chicken Kaeng Curry”. It’s amazingly good for something which was just thrown together at the last minute. This will be made again, but maybe with a little more spice.
- 3 Pounds Boneless Chicken
- 2 Potatoes Cubed
- 1/4 Cup Fish Sauce
- 1 Onion Chopped
- 1 Can Pineapple Chunks
- 1 Small Can Kaeng Curry Paste
- 1 Can Baby Corn
- Combine chicken, potatoes, fish sauce, onion and curry paste in a pot for 30 minutes on medium. Stir periodicly.
- Add pineapple chunks and baby corn and simmer for an additional 15 minutes.
