Pineapple & Baby Corn Chicken Kaeng Curry

What do we do with cans of random stuff sitting in the pantry. Tonight’s late night meal is “Pineapple & Baby Corn Chicken Kaeng Curry”. It’s amazingly good for something which was just thrown together at the last minute. This will be made again, but maybe with a little more spice.


  • 3 Pounds Boneless Chicken
  • 2 Potatoes Cubed
  • 1/4 Cup Fish Sauce
  • 1 Onion Chopped
  • 1 Can Pineapple Chunks
  • 1 Small Can Kaeng Curry Paste
  • 1 Can Baby Corn


  • Combine chicken, potatoes, fish sauce, onion and curry paste in a pot for 30 minutes on medium. Stir periodicly.
  • Add pineapple chunks and baby corn and simmer for an additional 15 minutes.
  • Serve
